Say you have too many eggs and not enough hatching time you can either:
1. trade them to some one for a pokemon for your dex
or
2. trade then to some one to hatch them

Yep, just like trading regular pokemon except that it hatches and has your ID so you don't get a double exp. bonus for trading it. I think it's quite funny though when you trade it... 'Bye Bye Egg' and 'Look after Egg for me' are just some of the dumb phrases the game says.
